These ribs sound fabulous! I just want to verify one point. Do you really leave the ribs wrapped in plastic and foil when you first put them in the oven?  I would be afraid the plastic would melt into the meat.

I believe the first time I made them I did use the plastic and it does not melt. However, we were advised by a friend who owns her own food business that it was probably not a good idea to use it so I don't anymore. The ribs are great!
