Here it is! I do it the night before (without cheese topping and chill- when I bake it the next day I spread the cheese and bake for about 45 minutes)!
4 lbs of potatoes, peeled and cut into 3/4 inch cubes
8 0z light cream cheese, cut into pieces at room temp.
1 cup shredded sharp cheddar cheese
2/3 cup of milk
2 tablespoons unsalted butter
salt and pepper
2 tablespoons chopped fresh chives
(garlic powder to taste)
pre heat oven to 350/ butter 13x9 baking dish
place potatoes in large pot and bring to boil over high heat. Reduce and let simmer for about 15- drain and return to pan

mash potatoes until chunky with mixer. Add cream cheese, 3/4 of cheddar cheese, milk, butter, salt and pepper to taste. Mix until smooth. Stir in chives. Spread evenly in baking dish and top with remaining cheese (i sometimes spread some more chives on top).
Bake until cheese is melted and casserole is heated through, about 30 minutes. Serve HOT!

This sounds really good. I always wonder what to do with left over mashed potatoes. I usually make potato pancakes. I love to try new ideas
