Those of you who love Prosecco, this is an elegant soup, lovely for a brunch or on any steamy day.

 

2 cups coarsely chopped cantaloupe

2 vups coarsely chopped honeydew melon

1 tablespoon fresh lime juice

1 cup fresh orange juice

1 tablespoon honey, or to taste

3/4 cup Prosecco

Sweetened whipped cream and lime zest for garnish Puree the cantaloupe, honeydew, orange juice, lime juice and honey in a blender until smooth.  Refrigerate in a covered container until chilled before serving..

Jusst befpre servong, stir in the Prosecco. 

Top with a dollop of whipped cream and sprinkle with the lime zest. 

4 to 6 servings.

This would offer a most delectable buzz to my day!

 

My daughter returned to college 1 week ago (yippee - having a 20 yr. old at home during the summer is questionable) and I don't want to party alone, so how about a virtual mimosa gathering when all the little/big kiddos return to their perspective classes?  For all you teachers, we can start a day early.

Next Saturday we're going to a diaquiri party at the house of 2 retired DODDS (That's Department of Defense Dependent Schools) teachers here in CS.

A lot of them, like us, retired here in CS or Denver and this couple host this party every year to celebrate NOT having to return to school.....
