To quote my husband. "The potatoes were the crowning touch of todays dinner." Everyone really liked them. I thought I had prepared enough for left overs. I have two petite potatoes left. Shucks! But better for my waist line. I am going to try them with cracked pepper,different herbs, maybe some sea salt. Thanks Again for sharing. Amanda

Finally, I think, "Spring has Sprung" in the N.D.What a JOY!!! Denise, I loved those potatoes when I made them for Easter. Never copied the recipe, and, I do not know what title to bring up the post. Could you please tell me the title of the post? Thanks a bundle!!!! Sandy

Sandy: Here they are. I found them under potatoes for PattiAnn: USE 12-15 BABY RED POTATOES PUT THEM IN A LARGE SAUCE PAN AND COVER WITH WATER ADD SOME KOSHER SALT TO TASTE. BRING TO A BOIL OVER HIGH HEAT, REDUCE TO SIMMER AND COOK UNTIL THEY ARE TENDER AND A KNIFE CAN BE INSERTED. TAKE THE POTATOES OUT AND DRAIN THEM.LET THEM COOL FOR A FEW MINUTES. THEN PUT BETWEEN TWO CLEAN DISH TOWELS. PUSH DOWN ON THEM TO SQUASH THEM. PUT ON A COOKIE SHEET COVERED WITH ALUMINUM FOIL ROAST THEM IN A 450* SPRINKLE WITH ABOUT 3/4 TEASPOONS SALT AND POUR SOME OLIVE OIL OVER AND UNDER THE POTATOES. ROAST ABOUT 30 MINUTES UNTIL CRISPY AND DEEP BROWN AROUND THE EDGES. I HAVE ROASTED AT DIFFERENT TEMPERATURES ACCORDING TO WHAT EVER MEAT I HAVE BEEN COOKING. JUST INCREASE THE TIME.

Denise, thanks ever so much!!! These are FAB!!! I promise I am taking the time, this time, to put this recipe in "my" favorites. Speaking of potatoes, Martha Stewart Show is on as I write this. Took a phone call, and, when I returned to the room where the show is on, she was mentioning to the mnodel, her guest, how dellicious she loves vermouth on her potatoes. Did any of you hear the deal on that?Enjoy Spring!!!!!! Sandy

Sandy: Martha was talking about the nicoise salad. She said that sometimes the French put some vermouth on the potatoes in the Nicoise Salad. Denise

Denise, you are a Love, Could not imagine putting vermouth on just any potato serving. We are dealing with a massive sink hole on our property, and, I was so distracted on the telephone all day trying to co-ordinate appointments and contractopors. Thanks so much!!!!!!!
