I missed the meatloaf thread when I was in Germany. Below is the one our family loves. Most all of my G-mother Helen's recipes were simple like this one, but great. I usually make into four smaller loaves to keep some in the freezer. Helen's Meat Loaf 1 egg, slightly beaten 3 slices, dried bread, crumbled well 2 lbs ground beef, choice 2 Tbsp chopped onion 2 Tbsp chopped bell pepper 1 tsp Salt 1 tsp pepper ½ cup Ketchup, divided Mix all ingredients well (except 1/4 cup ketchup). Shape into desired size loaf. Use the remaining Ketchup to coat the top of the loaves. Bake for 60 minutes for large loaf and 45 minutes for small loaves covered with foil the first 30 minutes. Remove the foil the last 15 minutes. May freeze up to three months.
