Ingredients:
1. Eggplant 500g2. Red chili 20g3. Cooking oil 40g4. Green onion (onion) 3g5. Ginger 3g6. Garlic 5g7. Soy sauce 30g8. Cooking alcohol 10g (any kind of alcohol is ok)9. Sugar 10g10. Monosodium glutamate (gourmet powder) 3g, it's an additive used by Chinese people in cooking every day, but if you don't have it, it's okay to skip11. Salt 2g
Directions:
1. Cut the eggplant into juliennes2. Cut the red chili into juliennes as well3. Shred the green onion (onion), ginger, and garlic into tiny pieces4. Pour 20g of the cooking oil into a wok and heat it, when it becomes hot add the green onion (onion), ginger and garlic and stir fry5. When there's good smell coming out add the eggplant and stir fry, when the eggplant gets soft take everything out, put into a plate6. Pour the other 20g of the cooking oil into the wok and heat it, when it becomes hot add half of the red chili, when the chili changes color add the eggplant juliennes and stir fry7. Add the other half of the red chili into the wok and keep stir frying8. When the red chili changes color add the cooking alcohol, soy sauce, sugar and little bit water, till it covers the bottom, turn the stove lower, braise for 1-2 minutes9. Add the garlic salt and gourmet powder (if you have) and stir, when everything's mixed evenly the dish is ready.
