Joy, this is a glutinous rice. There are many types to buy but I use one produced by Kodama Farms in CA.
Have prepared: 4 cups of rice, washed and drained
2 cups Chinese sausage, diced (the sausage is sweet)
1/2 cup dried Chinese mushrooms, pre-soaked in water until soft. Slice and dice
1/2 cup dried shrimp (small shrimp), pre-soaked in water and drained. Rough chop
In a heavy pot, place: the rice
2/1/2 cups boiling water
1/2 teaspoons salt
Cover and cook at high heat until water boils. Uncover. Water should be almost evaporated by now.
Add to the top of the rice: the Chinese sausage, mushrooms, and dried shrimp
Cover and cook, reduce to very low heat and continue cooking another 20 minutes. Uncover. Remove pot from stove and stir and mix all ingredients thoroughly. Serves 6.
*This rice is very sticky and you can expect a layer to be stuck to the bottom of the pot. I spray with PAM and that helps. To clean you pot, put water in it and bring to a boil and that will loosen it.
